Turkey salad with craisins and almonds

This is a turkey/chicken salad recipe that substitutes all the fats for non-fat Greek style yogurt. It has all the flavor, but none of the fat. Use in tortillas or lettuce wraps and give your New Year’s resolution somewhere to go, besides out the window.

1 pound roasted turkey (white and dark meat or any combination your prefer) OR 1 rotisserie chicken

3/4 cup Greek non-fat yogurt

1/2 cup frozen green peas

1/2 cup dried cranberries

1/4 cup slivered almonds

1/2 cup cherry tomatoes

1/2 teaspoon dried tarragon

salt and pepper to taste

Dice the turkey/chicken into bite sized pieces. Combine with all the other ingredients and chill for at least an hour. Check the seasonings and adjust to taste. You can add some water, 1 teaspoon at a time, if the yogurt is too dry. Add enough water to make a silky sauce that clings to the ingredients. This recipe will change the way you think about turkey/chicken salad. Enjoy!
